Inventory tracking is only available for stock products with a standard size.

You can manually enter the amount you have, and then every time an order is placed it will deduct from that amount.

If you dont check Permit Ordering Even When Quantity is Below Zero, customers will be unable to order if the inventory is below zero, so be sure to go enter the new inventory whenever you get a shipment.
