Locking elements is done from inside the Online Designer from your Employee Website. You can edit your product from the Settings >> View Products >> And then choosing your product. You can also edit products by choosing them on the home screen and clicking the settings wheel to the right of the name.

Once there and you are inside the online designer, select whichever element you want to lock down by clicking on it. Then, under the Common tab on the toolbar, check off Lock This Element during Order Entry. This will keep your contacts from being able to edit it

If you want contacts to be able to edit the text, but not change the color or location, check the box underneath that says Still Allow text to be edited.
